Average movies/low budget/indie/foreign movie/animated/regular TV series - I aim for HEVC, 720p, not really concerned about audio. Low file sizes and no video or sound issues. I try to keep movies around 1.5GB, and TV shows around 500MB. I've compared 2160p to 1080p/720p, I can't really see the difference, the upscaling works well, at least on my TV.

Cinematic masterpiece, high budget series (The Continental, Loki, etc.) - HDR when available, then high bitrate, Atmos, usually 1080p. I find HEVC & HDR usually work well together and result in a reasonable file size. I rarely download a movie larger than 6GB. I experimented with a full 4k bluray rip that was 50GB, the audio and video differences weren't even noticeable to me over the parameters I described above.

Make sure you check media server & TV picture settings, they are often not optimized for downloaded content.

Well, I'm old, but I allegedly have perfect vision with my glasses which I wear while watching good quality video, and my media room is pitch black. My screen is 65" about 10 feet away, which is optimal by the 1.6 times diagonal length rule. I'm sure if I put HEVC and a native 4K side by side I could see some difference, but by itself HEVC looks very good on this screen. In my mind it's not worth the bandwidth and drive storage cost to hoard 50+GB for each file I want to keep. Especially since most 4k HEVC files I download have HDR, the picture quality is excellent.
