Just watch the new seasons if you're unsure, they cover arc 3 (out of 3). It's simple enough to follow. If you like it you can go back and watch the first two arcs in the old anime.

Bleach is what got me into anime/manga. It's pretty great until episode 60ish, then the quality is a bit inconsistent with each season. Most of the filler is not great either.
Like some of the other anons have said, the manga is probably better, but I would still watch the anime. The music and voice acting makes it more enjoyable than the manga at times, and I say this as someone who almost always prefers manga.
