Hear me out, I love pasta. I love making it from scratch, I love combining pasta with different sauces wether it be seafood, meat, cream, tomato sauce, mushrooms, etc.
In my area/greater area there are the usual kebab shops, chinese take-aways, burger joints, and casual restaurants. But there are no pasta spots, none. So what I have in mind would be to set up a simple pasta bar.
- There is a high italian/spanish/portuguese diaspora here (Western Switzerland). Pasta is a popular meal.
- It suits the local palate.
- Cheaper than pasta in restaurant
- Lots of workers eat out for lunch here, it's the ideal meal for a short lunch break
What I have in mind for a shop is the following:
- Be mainly a take-away, like an ice-cream vendor.
- Homemade pasta, homemade sauces. This would be the tricky part because the sauce makes the dish
- Offer half a dozen of pasta shapes.
- Serve at a fast-food pace (3-5mins)
- Serve in a box, like a doner box.
What would make the difference over other food places ?
- I believe it would be that there are simply no """fast-food""" pasta vendors, the only place you can get a plate of pasta is in a restaurant.
Financing is obviously a big one. I have personal funds available but I do not know how the permits, insurance, etc work/cost.
After that, I do not know the do's and don't's about a small food business.
I would love to hear your comments, advice, criticism, potential, about this.
