I'd say 41% of it are the mods. I know that Dwarf Fortress probably has lots of mods too, but Rimworld's are just easier to understand, either thanks to /rwg/ or because of the experience I've had with the mods already after 300+ hours (probably 2x including offline mode) of playing. I've started the game again and again at least a hundred times, at every step of the game (after every DLC), so I know exactly what I need and why, and what is useless to me.

The other 41% is the UI. The Dwarf Fortress interface is like no other TBS I ever played. So hard to get used to. So many changes needed, but I don't know if I will regret changing them later (i.e. scrolling = zoom vs layers).

And the rest, maybe remaining 7%, I'd say is just the flow of the game, I can't tell if something in the past actually affects the present or not, and if yes how. Thousands of questions, hard to find answers, etc.'

i usually use Character Editor to fix stuff that is broken because of glitches because i install too many mods. it is very powerful. useful for saving pawns you like too

rimefeller is an oil drilling mod. suck crude oil out of the ground and process it into chemfuel. fills out late game stuff like making neutronamine and hyperweave and plasteel. probably overpowered but just turn the difficulty up and it wont trivialize things'

it always was a niche game for niche audiences.
It has several thing going for it.

First is a procgen, worlds and stories DF can generate are genuinely interesting and they are a huge draw for some people. Some are only using a game for that.

Second one is a freedom of creation, DF world is block based like minecraft. So you have a colony sim where your colony can take whatever shape you want. My favorite fortress was the one where I crammed everything into the one giant tower and built upward.

Third one is interactivity of systems, like a damage system, fluid mechanics and all that other stuff.

My gripe with a game is that I like second and third aspect the most, toady on the other hand is focused on the first one. He tries to improve procgen fantasy worldgenerator. What can even interfere with following aspects. For example I don't like to waste space on temples and guilds but i have to even though I don't really benefit from them.'

2012/13 you had an actually working game. Then when the overworld became interactive, goblin raids stopped happening for most players and you're now just playing untill FPS death kills your fortress.

Adventure Mode got hit even worse. The "new" conversation update is clunky even for DF purposes. The randomly generated names means you need to navigate a forest of gibberish to fond anything. Here's how adventure mode worked before that update

If you look at Dwarf Fortress as a colony simulator rather than a more traditional game, some of your complaints about the game lose some meaning.
For example, I can say that playing rFactor 2 instead of Gran Turismo is pointless unless I'm roleplaying, because rFactor2 doesn't have a career mode or anything with "progression", you just put any car from the game on the track and drive. GT, on the other hand, makes me get licenses, buy cars, progress through increasingly difficult championships, etc.
But rFactor 2 is a pure simulator and the simple act of driving a realistic car for some will be infinitely more interesting than GT's career and progression.
I've only "superficially" played Rimworld (40 hours) and Dwarf Fortress (about 10 hours). My opinion as a beginner is that the racing simulator analogy above fits perfectly here. Dwarf Fortress totally gives me that "simulator" feeling, unlike Rimworld, so I'd say they're two games in slightly different categories, despite being in the same genre (like GT and rFactor2). However, DF's simulation is still crap and needs a lot of work, and I don't think the autistic guy making the game is really going to deliver what the game needs.
