Check whether you meet the requirements for CG OCS. If you do, start talking to a recruiter. You can submit OCS-R packet as a civilian every 6 months. Then if you get selected you can compete for a flight school slot while at OCS. That is very hard.
But if you don't get picked at OCS and end up on a cutter/shoreside you can apply for flight school again every 6 months from within the fleet and you will likely get picked up within a few cycles if you have a command endorsement and good OERs.
Unlike the navy there are guaranteed flight slots.
And don't enlist thinking it will help your OCS chances if you only want to be an aviator. Civilian applicants have fewer strings and an easier application process. Only enlist if you would be happy staying in an enlisted job.

Sub officers are higher quality, on average, then your standard officer; and also more likely to be the autistic weirdo type then the frat boy, since you have to volunteer for sub duty. Sub enlisted are also more likely to be weirdos for the same reason, and and more likely to not be shitbags since it's volunteer positions and there's also no paint scrapers who washed out of BUDS and hate their life. The bennies also aren't as good as they were due to changes in the economy. Not that they aren't good but again, you need to weigh them carefully. Is spending a shorter amount of time in the military worth it compared to entering the workforce directly or using that time to get a degree? "Cool shit" falls into two categories: combat related and spooky. The former is few and far in between these days, though you'll do lots of cool-ish training if you go combat arms, end up in certain units, or both. Getting to do the latter isn't as tied to there being an ongoing war as the former but it also comes with tradeoffs: it's more technical and less cool than you imagine it to be, there are opportunity costs, you won't be the one kicking in the door in 99% of cases, and you need to be able to pass stringent background checks to do it.

As an officer you'd have management experience to go with whatever you do there, but as enlisted you basically just get out qualified to be a security guard or janitor. It's hard to say whether joining the military would help or hinder you without knowing you personally. I know people who enlisted as infantry and went on to go to Harvard after their contract ended. There's enlisted veterans in pretty much every field, and at some surprisingly high levels. On the flip side, time you spend as a grunt (or even as an intel/cyber/specialized medical/etc person) is time you could be spending getting your Bachelor's degree and looking at Master's and PhD programs or interning at national labs. I have no idea what proportion of people who work in R&D at, say, LockMart, or at Sandia, or wherever, were ever in the military, and it's hard to say whether veteran status would help you there or not.
Astronaut is an extremely competitive career field. There are both active duty and veterans who were astronauts - including some enlisted veterans! - but they were the cream of the crop in their fields. COL Andrew Morgan, for example, is a West Pointer who was in Special Forces before being selected for the astronaut program.

One final note: the Army has a program to allow enlisted personnel to apply for West Point. Not sure about numbers now but a few years ago people were saying that the slots rarely got used up because so few people applied for it. You can apply every year until you turn 22, iirc. I did it as a PFC (and didn't get in) and the process consisted of an interview with my company commander and battalion commander, writing a statement of intent, and an interview with the brigade CSM. If you do end up enlisting, keep this option in your back pocket.

Regardless of what you choose, I urge you to be fairly cold and pragmatic about it, as letting idealistic fantasies about military service, "cool shit," or the like cloud your vision typically leads to disappointment.
